reduces the risk of deflating delicate dough.</div><div class="t-redactor__text">The disadvantage is that parchment does not absorb moisture like linen, so the surface of the dough may remain slightly class="t-redactor__text">This is often the most frightening part for home bakers.</div><div class="t-redactor__text">The baguettes look beautiful on the couche — and now they somehow need to reach the oven.</div><div class="t-redactor__text">The less you handle them, the better.</div><div class="t-redactor__text">Traditionally, bakers use a thin transfer board called a <strong>flipping board</strong> or <strong>transfer peel</strong>.</div><div class="t-redactor__text">At home, a thin cutting board, stiff piece of cardboard covered with parchment, or another flat surface can
