Divide and Preshape

Shape the Pretzels

Working from the center outward, roll each cylinder into a strand about 55–65 cm / 22–26 inches long. For a Swabian pretzel, leave the middle noticeably thicker and taper both ends until they are thin. For a Bavarian-style pretzel, keep the strand more even from end to end.

Prepare the 4% Lye Bath

Place 1,000 g cold water in a glass or stainless-steel bowl. Wearing all protective equipment, slowly sprinkle 40 g food-grade sodium hydroxide into the water while stirring carefully with a stainless-steel utensil. The mixture will become warm. Stir until the lye is completely dissolved.

This makes a practical 4% baker's lye bath. Do not heat or boil it.

Dip, Score, and Salt

Working with one pretzel at a time, lower it carefully into the lye bath for 10 to 15 seconds. Lift it out with a stainless-steel skimmer, allow the excess solution to drip back into the bowl, and return the pretzel to its lined baking sheet.

Once all the pretzels have been dipped, use a sharp blade to score the thick lower curve with one confident cut about 5 mm deep. The cut gives the expanding dough a controlled opening and creates the pale contrast seen on traditional pretzels.

Sprinkle with pretzel salt immediately. Salt only the amount you intend to serve soon, because coarse salt draws moisture from stored pretzels.

Bake

Bake at 230°C / 450°F for 14 to 17 minutes, until the crust is a rich mahogany brown. Rotate the trays if your oven browns unevenly.

Do not remove the pretzels while they are still pale. The deep color is part of their flavor, but watch the thin arms closely because they brown faster than the thick center.

The baking-soda version will still be delicious, but it will usually have a lighter, less glossy crust and a milder pretzel flavor. Do not substitute baking soda gram for gram in the cold lye bath; this is a separate method.
