What Is the Best Flour for Baguettes?
Flour has a huge influence on the way a baguette behaves.
It affects how the dough absorbs water, how easily it stretches, how well it holds gas, how open the crumb becomes, and even how crisp the crust feels after baking.
But there is one common misunderstanding: the strongest flour is not always the best flour for baguettes.
For a good baguette, we want enough strength to hold shape and trap gas, but we also want extensibility. The dough needs to stretch easily during shaping and expand well in the oven.
That balance matters more than chasing the highest protein number on the bag.
Why Flour Choice Matters So Much in Baguettes
Baguettes are different from pan bread.
There is no loaf tin supporting the dough. The shaped baguette has to hold itself during proofing and then expand quickly in the oven.
If the flour is too weak, the dough may spread, tear easily, or struggle to hold gas.
If the flour is extremely strong, the opposite problem can appear. The dough may feel tight, resist shaping, and produce a crumb that feels more chewy than delicate.
A classic baguette needs both strength and flexibility.
Is T55 Flour the Best Flour for Baguettes?
French T55 flour is often associated with baguettes, and for good reason.
The number T55 refers to the flour's ash content under the French classification system. It does not directly tell you the protein level or flour strength.
Traditional T55 flour is usually relatively refined and works very well for lean French breads.
It can produce baguettes with:
- a thin, crisp crust
- a light crumb
- good extensibility
- a mild wheat flavor
- easy shaping
But there is an important point.
You do not need T55 flour to make a good baguette at home.
Flour sold as T55 can also vary significantly between brands. One bag may behave beautifully for baguettes while another may feel much weaker or stronger.
The label alone does not guarantee the result.
Can You Use Bread Flour for Baguettes?
Yes, absolutely.
For many home bakers, bread flour is the easiest and most reliable choice.
A good bread flour gives the dough enough structure to survive fermentation, shaping and final proofing.
It can be especially useful when:
- the dough has relatively high hydration
- fermentation is long
- you are using a poolish
- your kitchen is warm
- your flour tends to weaken quickly
But very strong bread flour is not automatically better.
Some high-protein flours are designed for very strong doughs, long fermentation or enriched bread. In baguette dough, they can sometimes feel too elastic and difficult to stretch.
You may notice the dough constantly pulling back while shaping.
That is usually a sign that the dough needs more relaxation — or that the flour is simply stronger than necessary.
Can You Make Baguettes With All-Purpose Flour?
Yes.
In fact, depending on the brand, all-purpose flour can be an excellent baguette flour.
In many countries, all-purpose flour falls somewhere around the middle between very soft flour and very strong bread flour.
That moderate strength can be perfect for baguettes.
The dough may feel softer than dough made with strong bread flour, so you may need to adjust the water slightly.
If your all-purpose flour absorbs less water, do not force the hydration written in a recipe.
Hold back some water and add it only if the dough can handle it.
A baguette with slightly lower hydration and good structure is better than an overly wet dough that spreads everywhere.
What Protein Percentage Is Best for Baguettes?
For home baguettes, flour with roughly 10.5–12.5% protein is often a very good place to start.
That range gives enough strength for most baguette doughs without making them unnecessarily tough.
But protein percentage is only part of the story.
Two flours can both contain 12% protein and behave completely differently.
Protein quality, wheat variety and milling all matter.
This is why one 11.5% flour may feel strong and elastic while another feels much softer.
So use the protein number as a guide, not as an absolute rule.
Is Higher Protein Better?
Not necessarily.
This is one of the biggest mistakes people make when choosing flour for baguettes.
They see a flour with 13.5% or 14% protein and assume it must make a taller, better baguette.
Sometimes it does give impressive strength.
But it can also make the dough:
- too elastic
- harder to lengthen
- more resistant during shaping
- chewier in the crumb
- less delicate than a traditional baguette
For some recipes, especially very wet or long-fermented doughs, stronger flour is useful.
For a classic baguette, however, moderate strength is often more pleasant to work with.
What Does Flour Strength W Mean?
Some European flours show a W value on the package.
W describes flour strength, or more specifically how much energy dough can absorb before it breaks in an alveograph test.
In simple terms:
- lower W = weaker flour
- higher W = stronger flour
For baguettes, flour somewhere in the moderate-strength range often works very well.
As a rough guide, W around 180–260 can be suitable for many baguette doughs.
A poolish or longer fermentation may benefit from flour toward the stronger end of that range.
But again, do not choose flour by one number alone.
Flour balance matters.
Another value sometimes shown is P/L, which gives information about elasticity versus extensibility.
For baguettes, good extensibility is especially useful because we want dough that stretches without fighting back.
Why Very Strong Flour Can Make Shaping Harder
Imagine trying to roll a baguette longer, but every time you stretch it, the dough shrinks back.
That often happens when the gluten network is very elastic.
Resting the dough helps.
After pre-shaping, a bench rest of 15–20 minutes allows the gluten to relax and makes final shaping much easier.
But if the flour itself is extremely strong, you may still notice more resistance.
For baguettes, I prefer dough that has enough strength to hold itself but is still willing to stretch.
The dough should work with your hands, not constantly fight them.
How Flour Affects Hydration
Never assume that two flours will absorb the same amount of water.
Strong bread flour often absorbs more water than softer all-purpose flour.
Whole-grain flour absorbs even more because bran and fiber take up water.
This means that a baguette recipe calling for 70% hydration may feel completely different depending on your flour.
If you are working with an unfamiliar flour, hold back 5–10% of the water at first.
Mix the dough.
Give it time to hydrate.
Then decide whether it really needs the remaining water.
This is much safer than adding extra flour later because the dough became too wet.
Flour and Open Crumb
People often assume that an open crumb comes from using very strong flour or extremely high hydration.
That is only partly true.
Flour must be strong enough to hold gas, but crumb structure also depends on:
- fermentation
- dough handling
- shaping
- proofing
- oven spring
- steam
You can use excellent flour and still produce a dense baguette if the dough is underfermented.
You can also use ordinary flour and produce a beautiful crumb if fermentation is right.
So flour matters — but it cannot compensate for poor fermentation.
Flour and Crust
Flour also affects the crust.
A baguette made from relatively refined wheat flour usually develops the thin, crisp crust we associate with French bread.
Higher-extraction or whole-grain flours create more flavor, but they also change the texture and color of the crust and crumb.
For a classic-style baguette, white wheat flour is usually the easiest choice.
If you want more flavor, you can replace a small amount of white flour with whole wheat or rye flour.
Even 5–10% whole-grain flour can noticeably deepen the flavor without completely changing the character of the baguette.
What If You Cannot Find T55 Flour?
Do not worry about it.
Choose the best ordinary wheat flour available to you.
Look for flour that:
- has moderate protein
- forms an elastic but stretchable dough
- absorbs water reasonably well
- holds shape after folding
- does not tear easily during shaping
If you have a choice between very soft cake-type flour and very strong high-protein flour, choose something in between.
For many home bakers, a good all-purpose flour or medium-strength bread flour works beautifully.
Can You Mix Two Flours?
Yes, and this can be very useful.
If your bread flour feels too strong, try mixing it with all-purpose flour.
For example:
50% bread flour + 50% all-purpose flour
can give you a nice balance between strength and extensibility.
If your flour is too weak, do the opposite: add some stronger bread flour.
This is often easier than searching for one perfect bag of flour.
My Practical Choice for Home Baguettes
If I were choosing flour for everyday home baguettes, I would not obsess over finding authentic French T55.
I would look for a good white wheat flour around 11–12.5% protein and see how the dough behaves.
If it holds gas, stretches without tearing, and does not constantly spring back during shaping, it is probably a very good baguette flour.
For poolish baguettes, I prefer flour with enough strength to tolerate the longer fermentation, but I still do not want it excessively strong.
The finished baguette should feel light and crisp, not heavy and rubbery.
The Best Flour Is the Flour You Learn to Understand
There is no single flour that works perfectly in every kitchen.
Water absorption changes.
Protein quality changes.
Brands change.
Even batches from the same mill can behave a little differently.
This is why experienced bakers pay attention not only to what is written on the package, but to how the dough feels.
A flour that gives you a dough that is strong, extensible and predictable is more useful than a prestigious flour that constantly fights you.
For baguettes, the goal is not maximum strength.
It is balance.
Enough strength to hold the gas.
Enough extensibility to shape easily.
And enough fermentation to turn simple flour, water, salt and yeast into a light, crisp baguette.
