Can You Overproof Sourdough Overnight?
One of the best things about sourdough baking is that it doesn't force you to stay in the kitchen all day. Many bakers mix the dough in the evening, let it rest overnight, and bake fresh bread the next morning.
It sounds simple.
But there's one question that worries almost everyone the first time they leave dough overnight:
Can sourdough become overproofed while you sleep?
The answer is yes.
But it doesn't happen nearly as easily as many people think.
In fact, thousands of excellent sourdough loaves spend the night in the refrigerator every single day.
The secret isn't avoiding overnight fermentation—it's understanding when and how to do it.

Overnight Fermentation Isn't the Problem

Many beginners believe that leaving dough overnight automatically means overproofing.
That's not true.
Cold temperatures slow fermentation dramatically.
Yeast and bacteria don't stop working, but they become much less active. Instead of racing through fermentation, the dough develops flavor slowly while maintaining its structure.
This slow fermentation is one of the reasons artisan sourdough has such a rich taste.
So, an overnight rest in the refrigerator is not only safe—it is often recommended.

What Actually Causes Overproofing?

Time alone doesn't overproof dough.
Overproofing happens when fermentation continues longer than the gluten structure can support.
Several things influence this:
  • Dough temperature.
  • Refrigerator temperature.
  • Starter percentage.
  • Strength of your starter.
  • Bulk fermentation before refrigeration.
These factors work together.
A dough placed into a refrigerator early in fermentation may still need twelve or even sixteen hours to become ready.
Another dough that was already fully fermented before chilling may become overproofed overnight.
The difference isn't the number of hours.
It's the condition of the dough before it went into the fridge.

The Biggest Mistake

The most common mistake is allowing bulk fermentation to finish completely at room temperature before refrigerating the dough.
Many bakers wait until the dough has expanded as much as possible.
Only then do they shape it and place it into the refrigerator overnight.
By that point, fermentation is already close to its limit.
Even though refrigeration slows the process, it doesn't stop it.
The dough continues fermenting all night.
The next morning it may feel soft, fragile and unable to hold its shape.
The loaf spreads instead of rising.
Not because the refrigerator failed.
Because the dough simply had very little fermentation left before going in.

A Cooler Fridge Gives You More Time

Not every refrigerator is equally cold.
A fridge running at 3–4°C (37–39°F) slows fermentation much more effectively than one at 7–8°C (45–46°F).
That small temperature difference can significantly change how the dough behaves overnight.
If your dough often feels overproofed in the morning, it may be worth checking the actual temperature inside your refrigerator.
Many home refrigerators are warmer than people realize.

Watch the Dough Before the Clock

A recipe may say:
"Refrigerate overnight."
But overnight isn't a fixed number of hours.
For one baker, overnight means eight hours.
For another, it's twelve.
Sometimes it's sixteen.
Instead of focusing on the clock, look at the dough before placing it into the refrigerator.
Does it still have strength?
Does it hold its shape?
Has bulk fermentation finished, or is there still room for further development?
Those answers matter much more than the exact number of hours.

How to Tell If the Dough Is Overproofed

An overproofed dough usually becomes noticeably different.
It may spread quickly when removed from the banneton.
The surface feels delicate and fragile.
Scoring becomes difficult because the dough doesn't keep its shape.
Instead of springing upward in the oven, it spreads outward.
The finished loaf often has a flatter profile with less oven spring.
That doesn't necessarily mean the bread is ruined.
It usually still tastes wonderful.
It simply won't have the same height and structure.

Overnight Fermentation Can Improve Bread

Many experienced bakers intentionally refrigerate their dough overnight because of the flavor.
The slow fermentation allows organic acids to develop gradually.
The crust often becomes darker and more flavorful.
The crumb develops a deeper, more complex taste.
Scoring cold dough is also much easier because it is firmer than warm dough.
This is why cold proofing has become one of the most common techniques in artisan baking.

Small Adjustments Make a Big Difference

If your dough regularly overproofs overnight, you don't necessarily need a new recipe.
Small adjustments often solve the problem.
You can reduce the amount of starter.
Shorten bulk fermentation slightly.
Use cooler water during mixing.
Or simply refrigerate the dough a little earlier.
Tiny changes can add several hours of flexibility without affecting the final bread.

Every Kitchen Is Different

One baker's overnight schedule may not work in another kitchen.
A very active starter, warm summer temperatures or a slightly warm refrigerator all speed up fermentation.
That's why comparing your dough to someone else's timing rarely works.
Your dough responds to your conditions.
Learning those conditions is one of the most valuable skills in sourdough baking.
Over time, you'll stop wondering whether the dough can stay overnight.
You'll know exactly when it's ready for the refrigerator.
