How Long Should Tartine Dough Cold Proof?
After shaping Tartine dough, many bakers place it in the refrigerator overnight. This part seems simple: cover the proofing basket, refrigerate it, and bake the next morning.
But “overnight” can mean eight hours in one kitchen and sixteen in another. Meanwhile, the dough continues changing in the refrigerator. It becomes firmer and easier to score, its flavor develops, and fermentation slowly continues.
For my Tartine-style bread, a cold proof of 8–14 hours is a practical range. Around 10–12 hours is a good starting point when the refrigerator stays at approximately 3–5°C (37–41°F).
However, the correct time depends on how far bulk fermentation progressed, how warm the dough was during shaping, and the actual temperature inside the refrigerator.
Cold Proofing Does Not Stop Fermentation Immediately
The refrigerator slows fermentation, but it does not switch it off the moment the dough goes inside.
A shaped loaf may still be close to 24–26°C (75–79°F) at its center. It takes time for that warmth to escape. During the first few hours, the starter can remain surprisingly active, especially in a large loaf.
This is why dough that already looks extremely aerated before refrigeration can become overproofed by morning. The outside cools first, while the warm center continues fermenting.
If your dough finishes bulk fermentation on the warmer side or rises close to 60%, it will usually need a shorter cold proof. If it is shaped earlier and still has plenty of strength, it may tolerate a longer rest.
Cold-proof time cannot be separated from bulk fermentation. The two stages are part of the same fermentation process.
Why 8–14 Hours Works Well
Eight hours gives the loaf enough time to chill thoroughly and become firm enough for clean scoring. It also fits naturally into an overnight baking schedule.
A cold proof of 10–12 hours usually gives the dough more time to develop flavor while remaining within a safe range for well-fermented, strong Tartine dough.
Fourteen hours can also work well when:
- the refrigerator is reliably cold;
- the dough was not pushed too far during bulk fermentation;
- the flour has developed a strong gluten network;
- the loaf still felt supported during shaping.
Once the cold proof moves much beyond 14–16 hours, the result becomes less predictable. Strong dough in a very cold refrigerator may remain in good condition, but warmer or more fermented dough can lose strength.
The longest possible proof is not necessarily the best proof. The goal is to bake while the loaf still contains enough strength for good oven spring.
Refrigerator Temperature Matters More Than You Think
Many home refrigerators are warmer than their settings suggest. The temperature also changes depending on where the basket is placed and how often the door is opened.
At approximately 3–5°C (37–41°F), fermentation slows considerably after the center of the loaf has cooled. This temperature range is well suited to an overnight cold proof.
At 6–8°C (43–46°F), fermentation remains much more active. Dough left for 12–14 hours in this warmer refrigerator can behave like dough given a much longer proof in a colder one.
Do not rely only on the temperature shown on the refrigerator control. Place a simple refrigerator thermometer near the location where you normally keep the dough.
Avoid placing the basket in the refrigerator door, where temperature changes are frequent. A shelf toward the back is usually colder and more stable, but make sure the dough is not touching a surface cold enough to freeze it.
When to Choose a Shorter Cold Proof
Use the shorter end of the range—approximately 8–10 hours—when the dough was already very active before shaping.
This may be the better choice if:
- bulk fermentation ended with close to a 60% rise;
- the dough temperature was above 26°C (79°F);
- your kitchen was particularly warm;
- the dough felt very soft and aerated during shaping;
- the starter was exceptionally active;
- your refrigerator is warmer than 5°C (41°F).
In this situation, leaving the loaf until late the next day may push it beyond its strongest stage.
If the schedule allows, bake it early in the morning. A slightly shorter cold proof is safer than waiting until the dough becomes fragile and loses its oven spring.
When the Dough Can Proof Longer
A 12–14-hour cold proof is more suitable when the dough was shaped before it became extremely aerated.
The longer time may work if:
- bulk fermentation ended closer to a 40% rise;
- the dough remained elastic and well supported;
- shaping created good surface tension;
- the refrigerator stays close to 3–4°C (37–39°F);
- strong bread flour was used.
The loaf should not be deliberately underfermented simply because you plan to refrigerate it. Cold proofing can finish the final rise, but it cannot correct dough that barely fermented during bulk.
If the dough enters the refrigerator dense, tight, and almost bubble-free, it may still be underproofed the next morning.
How to Tell If the Cold-Proofed Dough Is Ready
Judging cold dough is not always easy because refrigeration makes it feel firmer. Even weak dough may temporarily appear strong when it is thoroughly chilled.
Look at several signs together.
The loaf should have expanded slightly in the basket, but it does not need to double. Its surface may look smoother and somewhat fuller. When turned out, it should retain its form long enough to score and transfer to the oven.
A ready loaf feels aerated beneath its cold surface. It should not feel like a dense, solid block, but it should also not collapse as soon as it leaves the basket.
The finger-poke test is less reliable on cold Tartine dough. Chilled gluten naturally responds more slowly, so a dent that remains does not always mean the loaf is overproofed.
The condition of the dough before refrigeration, its appearance in the basket, and its ability to hold shape provide better information than one poke.
Signs the Dough Has Cold-Proofed Too Long
Overproofed dough often looks very swollen in the basket but loses volume when turned out. It may spread quickly, wrinkle, or stick despite being well floured.
The surface can feel fragile, and scoring may cause the loaf to deflate. In the oven, the cut opens only slightly, and the loaf spreads sideways instead of rising upward.
Other possible signs include:
- weak surface tension;
- little or no oven spring;
- a flat profile;
- a pale or thin crust;
- a compressed or slightly gummy crumb;
- excessive acidity.
These problems do not always come from the cold proof alone. The dough may already have fermented too long during bulk, with the overnight rest simply taking it further.
Next time, end bulk fermentation earlier, reduce the cold-proof time, or check whether the refrigerator is too warm.
What If the Dough Still Looks Underproofed?
Sometimes the loaf comes out of the refrigerator looking tight and barely expanded.
If bulk fermentation was clearly short and the dough still feels dense, leave the basket at room temperature for approximately 30–60 minutes while the oven preheats. Watch for a slight increase in volume and a lighter feel.
Do not automatically warm every cold-proofed loaf. If the dough was sufficiently fermented before refrigeration, allowing it to sit in a warm kitchen may cause unnecessary overproofing.
In most cases, properly fermented Tartine dough can be baked directly from the refrigerator.
Should Tartine Dough Warm Up Before Baking?
Usually, no.
Cold dough is firmer, easier to turn out, and easier to score cleanly. Baking it directly from the refrigerator also reduces the chance that a fully proofed loaf will soften and spread while the oven heats.
Preheat the Dutch oven or baking surface thoroughly before removing the basket from the refrigerator. Turn out the dough, score it, and transfer it to the oven without a long delay.
Warming is useful only when the loaf is genuinely underproofed. It should not be treated as a required step in every bake.
Does a Longer Cold Proof Make Bread More Sour?
A longer cold proof can deepen the flavor and may increase acidity, but time is not the only factor controlling sourness.
Starter condition, flour type, dough temperature, fermentation during bulk, and refrigerator temperature all influence the final taste.
Extending the cold proof simply to create stronger acidity can weaken the loaf before producing the flavor you want. A well-fermented loaf proofed for 10–12 hours often has a more balanced flavor than overproofed dough left in the refrigerator for an entire day.
Good Tartine bread should taste complex and wheaty, with pleasant acidity—not sharply sour at the expense of structure.
A Practical Schedule for Tartine Dough
A simple home schedule might look like this:
- Finish shaping at 8:00 p.m.
- Place the covered basket in the refrigerator immediately.
- Begin preheating the oven at 6:30–7:00 a.m.
- Bake the loaf directly from the refrigerator at 7:15–7:30 a.m.
This gives the dough approximately 11 hours of cold proofing.
If you need to bake later in the day, shape the dough slightly earlier in fermentation and make sure the refrigerator is cold enough. Do not assume every loaf can wait until afternoon without changing the earlier stages.
Let the Whole Process Decide the Time
For Tartine-style dough, 8–14 hours is a reliable working range, and 10–12 hours is an excellent place to begin.
Choose a shorter proof when the dough is warm, highly aerated, or already near the end of fermentation. Allow more time when the dough was shaped earlier, remains strong, and is stored in a reliably cold refrigerator.
Most importantly, do not judge the cold proof as an isolated stage. Bulk fermentation, dough temperature, flour strength, shaping, and refrigerator temperature all determine how much fermentation remains after the loaf enters the basket.
When those factors are balanced, the cold proof does more than make the schedule convenient. It gives the loaf deeper flavor, a firmer surface for scoring, and the strength to expand beautifully when it reaches the hot oven.
