How Many Stretch and Folds Does Tartine Dough Need?
Tartine dough is soft, extensible, and relatively high in hydration. It needs enough strength to hold fermentation gases and rise upward in the oven, but that strength is not built through intensive kneading. Instead, the gluten develops gradually through rest and a series of folds during bulk fermentation.
For most Tartine-style dough, four to six sets of stretch and folds are a good starting point. Perform them approximately every 30 minutes during the first two to three hours of bulk fermentation.
However, the correct number is not always the same. Strong flour and well-mixed dough may need only four sets. Wetter dough or flour that develops strength more slowly may benefit from five or six.
The important question is not simply how many folds you have completed. It is whether each fold is still improving the dough.
What Counts as One Set of Stretch and Folds?
One set includes stretching and folding the dough from several sides.
Wet your hand lightly, reach under one side of the dough, and gently lift it until you feel resistance. Fold that section over the center. Turn the container and repeat the movement from the other sides.
Usually, four folds—one from each side—complete one set.
This whole sequence counts as one set, not four separate stretch-and-fold sessions. After completing it, cover the container and allow the dough to rest for approximately 30 minutes before checking it again.
The rest between folds is important. Gluten needs time to relax before it can be stretched again. Folding the dough continuously without a pause can tighten or tear it instead of building an elastic structure.
Why Tartine Dough Needs Folding
At the beginning of bulk fermentation, Tartine dough may feel loose, sticky, and poorly organized. It can spread across the bottom of the container and tear when lifted.
Each fold rearranges the gluten network and helps the dough hold its shape. As fermentation continues, the dough should gradually become smoother, more elastic, and easier to lift as a single mass.
Folding also redistributes temperature, microorganisms, and fermentation gases throughout the dough. This encourages more even fermentation without pressing out all the air that has already formed.
The change should be noticeable from one set to the next. The first fold may feel awkward and messy. By the third or fourth set, the dough should usually feel more cohesive and pull away from the container more cleanly.
A Practical Folding Schedule
For my Tartine-style sourdough recipe, this schedule is a useful starting point:
- First fold: 30 minutes after the starter and salt have been fully incorporated
- Second fold: 60 minutes
- Third fold: 90 minutes
- Fourth fold: 120 minutes
- Optional fifth fold: 150 minutes
- Optional sixth fold: 180 minutes
The first three or four sets are usually the most important because the dough is still developing its structure.
After that, handle it more carefully. Fermentation gases are accumulating, and aggressive folding late in bulk fermentation can remove those gases or damage the structure you have already created.
The original Tartine Country Bread method also folds the dough at approximately 30-minute intervals during the first three hours. In a home kitchen, however, the exact number should still be adjusted to the flour, hydration, and condition of the dough.
How to Know When the Dough Has Had Enough Folds
A well-developed dough begins to tell you that it no longer needs much help.
When you reach under it, the dough should lift as one connected mass rather than running between your fingers. It should stretch without tearing immediately and hold a rounded shape for longer after being folded.
You may also notice that:
- the surface looks smoother;
- the dough feels more elastic;
- the edges pull away from the container;
- the mass sits slightly higher instead of spreading flat;
- bubbles begin appearing along the sides;
- the dough holds the shape created by the fold.
If the fourth set leaves the dough smooth, supported, and elastic, you do not need to complete six sets simply because the schedule says so.
Another fold is useful only when it adds strength.
When the Dough Needs More Folding
Some dough remains very loose after four sets. It may flatten almost immediately, feel weak when lifted, or stretch without offering any resistance.
In this case, a fifth or sixth gentle fold may help. This is especially common when the dough has high hydration, the flour absorbs water slowly, or the gluten was not developed sufficiently during mixing.
But folding cannot solve every structural problem.
If the dough remains almost liquid after six sets, the hydration may be too high for the flour. The flour itself may be weak, or the dough may already be breaking down because fermentation has gone too far.
Continuing to fold weak dough indefinitely will not necessarily make it stronger. Sometimes the better solution is to reduce the water slightly in the next bake or use stronger bread flour.
Can Tartine Dough Be Folded Too Much?
Yes. More folds do not automatically create better bread.
Overfolded dough can become excessively tight and resistant. Instead of stretching smoothly, it may spring back, tear, or become difficult to shape. Too many late folds can also press out the gases produced during bulk fermentation.
This is particularly important once the dough becomes visibly aerated. Early folds build structure. Late folds should be used only when the dough clearly needs additional support.
If the dough has already developed strength but continues to spread later in bulk fermentation, another fold may temporarily tighten it without fixing the underlying problem. The dough may simply be fermenting too long.
Strength should develop early enough that the dough can spend the later part of bulk fermentation rising undisturbed.
Stretch and Folds or Coil Folds?
Traditional stretch and folds work well during the early stages, when the dough is still loose and needs more noticeable strengthening.
Coil folds are gentler. The dough is lifted from the middle and allowed to tuck underneath itself. They are useful later in bulk fermentation, when the dough already contains bubbles and you want to preserve them.
You can use regular stretch and folds for the first two or three sets and change to coil folds for the final one or two sets. It is not necessary to use both techniques, but this combination can work especially well with very soft Tartine dough.
Whichever method you choose, handle the dough with purpose but without pulling it until it tears.
Temperature Changes How the Dough Responds
Warm dough develops and ferments faster. At approximately 26–27°C (79–81°F), it may become elastic quickly, but it can also lose strength sooner if bulk fermentation continues too long.
Cooler dough may feel firmer while developing more slowly. It might need longer rests between folds or an additional set before it becomes cohesive.
Do not mistake cold firmness for strong gluten. The real test is whether the dough stretches smoothly, holds together, and retains some shape after folding.
The activity of the starter matters as well. A very active starter can produce gas quickly, so folds should be completed early before the dough becomes highly aerated.
Let the Dough Rest After the Final Fold
Once the dough has enough strength, leave it alone to finish bulk fermentation.
This undisturbed period allows the dough to expand and accumulate gas. Continue watching its volume, surface, bubbles, and movement in the container.
Stretch and folds develop the structure, but they do not determine when bulk fermentation is complete. The dough may need another hour or more after the final fold before it is ready for pre-shaping.
For my Tartine-style recipe, the dough is usually ready when it has risen approximately 40–60%, looks aerated, moves with a gentle jiggle, and still has enough strength to hold together.
Let the Dough Decide
Four to six sets of stretch and folds are a useful starting range for Tartine dough, with approximately 30 minutes of rest between them.
But the best result does not come from reaching a fixed number. It comes from noticing how the dough changes.
If it becomes smooth, elastic, and supported after four sets, stop folding and let fermentation continue. If it is still loose but not overfermented, add one or two gentle sets. If repeated folding produces no improvement, look at the hydration, flour strength, mixing, and fermentation rather than simply folding again.
The purpose of folding is to give the dough enough structure to hold its gases—not to keep handling it until the timer or recipe says you are finished.
