How Much Should Tartine Dough Rise During Bulk Fermentation?
When making Tartine-style bread, one of the most difficult questions is knowing when bulk fermentation is finished. The recipe may give an approximate number of hours, but the dough rarely follows the clock exactly.
Some bakers wait for the dough to double. Others end bulk fermentation after a much smaller rise. This can be confusing, especially when the dough looks active but you are unsure whether it needs more time.
For my Tartine-style sourdough recipe, the dough usually needs to rise by approximately 40–60% during bulk fermentation. It does not need to double.
However, this percentage is only a guide. Dough temperature, starter activity, flour strength, room temperature, and the length of the cold proof all affect the right moment to begin shaping.
Why Tartine Dough Does Not Need to Double
Dough continues fermenting after bulk fermentation ends.
It ferments during pre-shaping, the bench rest, final shaping, and the first part of the cold proof. Even inside the refrigerator, fermentation does not stop immediately. The center of a warm loaf may take several hours to cool.
If the dough doubles during bulk fermentation and is then left in the refrigerator overnight, it may become overfermented before baking. The gluten weakens, the shaped loaf loses tension, and the dough can spread when it is turned out of the proofing basket.
This is why Tartine-style dough is usually shaped before it reaches its maximum volume.
The goal is to finish bulk fermentation while the dough is clearly aerated but still strong enough to survive shaping and a long cold proof.
What Does a 40–60% Rise Look Like?
It can be difficult to estimate volume in a wide bowl. A straight-sided transparent container makes the change easier to see.
Mark the dough level immediately after mixing. If the dough begins at the 1-liter mark, a 50% rise means it should reach approximately 1.5 liters—not 2 liters.
The dough should look fuller and lighter than it did at the beginning. Its surface may become slightly domed, and bubbles should be visible along the sides and underneath. The edges often look rounded rather than flat against the container.
When you gently shake the container, the dough should move with a soft jiggle. It should not behave like a thin liquid, but it should no longer feel heavy and motionless.
A rise of 40–60% is easiest to judge when volume is considered together with these visible changes.
Temperature Changes the Amount of Rise You Need
Warm dough ferments quickly and continues fermenting for longer while cooling in the refrigerator.
If your dough temperature is around 26–27°C (79–81°F), you may want to end bulk fermentation closer to a 30–40% rise, especially if you are planning a long cold proof.
At approximately 24–25°C (75–77°F), a rise of around 40–50% often works well.
Cooler dough may need more time and can sometimes rise closer to 50–60% before shaping. But cool dough should not be judged by volume alone. It must also feel aerated, elastic, and alive.
The warmer the dough and the warmer the refrigerator, the more fermentation will continue after shaping. Therefore, the dough should usually leave bulk fermentation a little earlier.
Starter Amount and Activity Also Matter
A large amount of strong starter can move the dough through bulk fermentation surprisingly quickly. A young or sluggish starter may produce a much slower rise.
The starter should be active and close to its peak when added to Tartine dough. It should contain many bubbles, smell pleasantly fermented, and show a clear increase in volume after feeding.
If the starter is weak, the dough may sit for many hours without developing enough gas. Waiting for a particular percentage will not solve the problem if the dough remains dense and heavy.
On the other hand, very active starter combined with a warm kitchen can make the dough rise faster than expected. In that situation, waiting for the time stated in the recipe may result in overfermentation.
The dough’s progress matters more than the planned schedule.
Look at the Strength of the Dough
A rise in volume tells you that fermentation is happening, but it does not tell you whether the dough still has enough strength.
Properly fermented Tartine dough should feel lighter and softer than it did after mixing, yet it should still hold together when lifted. It should stretch without immediately tearing and pull away from the container as one cohesive mass.
When turned onto the work surface, it may relax slightly, but it should not immediately spread into a flat puddle.
Underfermented dough often feels tight, heavy, and reluctant to stretch. It may have a smooth surface but only a few bubbles. During shaping, it can resist your hands, and the baked loaf may contain large tunnels surrounded by dense crumb.
Overfermented dough usually feels extremely airy, sticky, and fragile. It may have risen beautifully in the container but collapse when removed. The surface tears easily, and creating tension during shaping becomes difficult.
The best moment lies between these two stages: enough gas has developed to lighten the dough, but the gluten network still has the strength to hold it.
How the Cold Proof Affects Bulk Fermentation
The planned cold-proofing time should influence when you finish bulk fermentation.
If the shaped loaf will remain in the refrigerator for 12–14 hours, it is safer to finish bulk fermentation slightly earlier. If you plan a shorter cold proof of approximately 8 hours, the dough may be allowed to develop a little more before shaping.
The temperature of the refrigerator is equally important. At 3–5°C (37–41°F), fermentation gradually slows considerably. At 7–8°C (45–46°F), the dough can continue fermenting much more actively overnight.
A refrigerator that feels cold enough for food may still be warmer than expected for a long sourdough proof. A simple refrigerator thermometer can help you understand why the same dough sometimes behaves differently from one bake to another.
Do Not Wait for Every Sign to Become Extreme
Many bakers miss the correct moment because they wait for the dough to become dramatically bubbly, extremely soft, and doubled in volume.
Bulk fermentation should end before the dough begins losing strength. The signs should be clearly present, but they do not need to be exaggerated.
Look for several changes together:
- an increase in volume of approximately 40–60%;
- bubbles along the sides and underneath;
- a slightly domed or rounded surface;
- a soft jiggle when the container is moved;
- a lighter, more elastic feel;
- enough strength for the dough to hold together.
One sign alone can be misleading. A few bubbles do not mean the dough is ready, and a particular volume increase does not guarantee correct fermentation if the dough feels weak.
The Best Rise Is the One That Fits Your Kitchen
There is no single percentage that works for every Tartine loaf.
For the recipe on my website, 40–60% is a useful starting range. In a warm kitchen or before a long cold proof, I would stay closer to the lower end. With cooler dough and a shorter final proof, I may allow the dough to rise closer to the upper end.
Make a note of the dough temperature, approximate rise, bulk-fermentation time, and cold-proofing time. Then compare those notes with the baked loaf.
If the bread is dense and the dough felt tight during shaping, bulk fermentation probably needed more time. If the dough spread, tore easily, and produced weak oven spring, it may have gone too far.
The goal is not to reach a perfect number on the container. It is to shape the dough when it is aerated, elastic, and still strong enough to continue fermenting without collapsing.
