How Wet Should Ciabatta Dough Be?
Ciabatta dough should be noticeably wetter and softer than ordinary bread dough. It may stick to your fingers, relax after folding, and spread slightly when turned onto the work surface. All of this is normal.
But there is an important difference between dough that is pleasantly wet and extensible and dough that is simply too liquid to hold itself together.
Properly hydrated ciabatta dough feels delicate but still has structure. It can trap fermentation gases, stretch without immediately tearing, and be lifted as one mass. Dough that behaves like batter, pours from the container, or never gains strength during folding probably contains more water than the flour can support.
The correct hydration is not one fixed number. It depends on your flour, mixing method, poolish, temperature, and experience with wet dough.
What Hydration Is Common for Ciabatta?
Many ciabatta recipes use approximately 70–80% hydration. Some formulas go even higher, but a higher number does not automatically produce better bread.
If you are working with unfamiliar flour, hydration around 72–75% is often easier to control. Strong bread flour may handle 78–80%, especially when the gluten is developed well and the water is added gradually.
Hydration is calculated by dividing the total amount of water by the total amount of flour and multiplying by 100.
When using poolish, remember to include the flour and water from the preferment in the calculation. Looking only at the ingredients added to the final dough can give you the wrong hydration percentage.
For example, if the poolish contains 200 g of flour and 200 g of water, both amounts must be included in the totals.
The number is useful, but the dough itself gives you the final answer. Two flours can behave very differently at exactly the same hydration.
Wet Dough Should Still Have Structure
Immediately after mixing, ciabatta dough may look rough, loose, and sticky. It does not need to form a firm ball around the dough hook or clean the sides of the bowl like a lower-hydration dough.
After resting and folding, however, it should begin to change.
The surface becomes smoother. The dough stretches more easily, lifts more cleanly, and starts holding together as one mass. After a fold, it may slowly relax outward, but it should not immediately flatten into a puddle.
When you lift one side with wet hands, the dough should stretch into a broad sheet before folding over itself. It may feel soft and slippery, but it should offer some resistance.
By the final fold, properly hydrated dough usually feels elastic, airy, and supported from within. It still sticks, but it no longer feels completely uncontrolled.
If the dough remains like thick pancake batter throughout the entire process, the problem is not simply that ciabatta is supposed to be wet.
Flour Determines How Much Water the Dough Can Hold
Not all bread flour absorbs the same amount of water.
Protein percentage can help you choose flour, but it does not tell you everything. The quality of the gluten, the type of wheat, the milling process, and the age of the flour all affect its ability to absorb water and create a strong dough.
One flour may produce a beautifully elastic ciabatta at 78% hydration. Another flour with a similar protein percentage may become loose and fragile at 75%.
Whole-wheat flour generally absorbs more water, but it can also make the gluten network less continuous because bran particles interfere with its structure. Therefore, adding whole-wheat flour does not always mean that you can safely increase hydration without changing anything else.
The best hydration is the amount of water your flour can hold while still producing dough that gains strength during mixing and folding.
Add the Water Gradually
One of the safest ways to control ciabatta dough is to hold back part of the water during the initial mix.
Combine the flour with most of the water and allow it time to hydrate. Once the dough has begun developing gluten, add the remaining water in small portions.
This method is often called bassinage.
The dough may become slippery and appear to separate when the extra water is first added. Continue mixing or folding gently until the water is absorbed before adding more.
If the dough already feels extremely loose, you do not have to use all the reserved water. The written recipe tells you how much water worked with the author’s flour—not how much your flour must accept.
Stopping before the final portion of water is often better than forcing the dough to absorb more than it can hold.
Resting Can Change the Dough Dramatically
Freshly mixed wet dough can look weaker than it really is.
Flour needs time to absorb water. A rest of 20–30 minutes can make ciabatta dough smoother and easier to handle without adding more flour or mixing aggressively.
For this reason, do not decide that the dough is too wet during the first few minutes of mixing. Give it time to hydrate, then complete the first fold and observe how it responds.
If it becomes more cohesive after resting and each fold produces a visible improvement, the hydration may be appropriate.
If it remains runny, tears constantly, and shows no improvement after resting and several early folds, the hydration is probably too high for the flour—or the flour itself is too weak.
Sticky Does Not Always Mean Too Wet
Ciabatta dough is supposed to be sticky. Adding flour every time it sticks to your hands can reduce hydration unevenly and create dry, dense areas inside the bread.
Use wet or lightly oiled hands during mixing and folding. During dividing, use a generously floured work surface and a bench scraper.
Try to judge the dough by its strength rather than by whether it sticks.
A sticky dough that stretches, holds gas, and lifts as one piece may be perfectly hydrated. A dough that is less sticky but tears easily and cannot trap bubbles may actually need more gluten development.
Stickiness alone is not a reliable test.
Signs That the Dough Is Too Wet
Dough that contains more water than the flour can support usually remains shapeless even after mixing, resting, and folding.
It may:
- pour from the bowl instead of releasing as one mass;
- spread immediately after every fold;
- tear when lifted;
- stick so heavily that it cannot be handled even with wet hands and a scraper;
- lose nearly all its volume during dividing;
- bake into a wide, flat loaf with a compressed or gummy crumb.
Too much water can also make fermentation difficult to read. The dough may show many bubbles but lack enough gluten strength to hold them securely.
The solution for the next bake is usually to reduce the water slightly—often by 20–30 g—rather than making a dramatic change. Small adjustments are easier to evaluate.
Signs That the Dough Is Too Dry
Ciabatta dough can also be too stiff.
A dry dough feels firm, tight, and resistant to stretching. It may hold its shape easily, but it does not relax naturally. Folding feels more like working with ordinary sandwich bread than with ciabatta.
During fermentation, the dough may rise, but the bubbles remain small and evenly distributed. The baked loaf can have good height while lacking the light, irregular crumb associated with ciabatta.
If the dough is strong but unusually tight, increase the water gradually in the next batch. Even an additional 10–20 g can noticeably change the crumb and handling.
Do not jump immediately from manageable dough to extremely high hydration. Increase the water step by step while watching how the flour responds.
Fermentation Changes How Wet the Dough Feels
A dough that feels perfectly controlled after mixing can become much softer during fermentation.
As fermentation continues, the dough becomes more extensible. Acids and enzymes gradually affect the gluten, and the growing gas bubbles stretch its structure.
This normal softening should not be confused with excessive hydration.
Properly fermented dough feels lighter, airier, and more delicate but still supported. Overfermented dough becomes sticky, fragile, and almost fluid. It may have held its shape earlier but suddenly collapse when turned out.
If the dough was strong after folding and only became extremely loose at the end of bulk fermentation, the problem may be too much fermentation rather than too much water.
Reducing hydration will not fully solve a timing problem. You also need to watch the temperature and end bulk fermentation before the gluten begins to weaken.
Can You Fix Ciabatta Dough That Is Already Too Wet?
If the dough is only slightly too loose, allow it to rest and perform another gentle fold early in bulk fermentation. Sometimes the flour simply needs more time to absorb the water.
Avoid adding handfuls of flour late in the process. The new flour may not hydrate evenly and can leave streaks of dry dough in the crumb.
If the dough remains completely liquid and cannot build strength, it may not produce traditional ciabatta loaves. Instead of throwing it away, transfer it to a well-oiled tray and bake it as a focaccia-style bread.
For the next batch, hold back part of the water and add it only after the dough has developed enough strength.
The ideal ciabatta dough is wet enough to stretch and create an open crumb, but strong enough to hold gas and survive dividing, proofing, and transfer. Once you learn to recognize that balance, the hydration percentage becomes a guide rather than a rule.
