How Long Should Poolish Ferment?
One of the most common questions home bakers ask is:
"How long should Poolish ferment?"
The answer depends on two factors: the amount of yeast and the room temperature. In general, a longer fermentation with less yeast produces a richer flavor and better aroma.

How to Tell When Your Poolish Is Ready
Don't rely on the clock alone. Instead, look for these visual signs.
A mature Poolish should:
- Double or triple in volume.
- Be filled with small bubbles, giving it the appearance of airy pancake batter.
- Have a slightly domed surface. If the center begins to collapse and leaves a ring around the container, the Poolish has reached its peak and should be used immediately.
- Smell pleasantly sweet, slightly fruity, and mildly alcoholic.
If your Poolish develops a strong sour or vinegar-like smell, it has over-fermented and may weaken the dough.
