Why Does My Dough Stick to the Bowl During Bulk Fermentation?
You mix the dough, leave it to ferment, and return later expecting a smooth, airy mass that releases easily from the bowl. Instead, the dough clings to the sides and bottom. When you try to lift it, it stretches into long sticky strands or leaves a wet layer behind.
Some sticking during bulk fermentation is completely is normal, especially with high-hydration sourdough. The important question is not whether the dough sticks at all, but whether it is becoming stronger and more cohesive as fermentation progresses.

A Little Sticking Is Normal

Sourdough contains water, and wet dough naturally adheres to most surfaces. Even well-developed dough may cling slightly to a glass, plastic, or metal container.
Healthy dough usually releases with the help of a damp dough scraper. It may stick at first, but it lifts as one elastic mass rather than smearing across the bowl. After several folds, it should feel smoother and hold together more confidently.
Troubled dough behaves differently. It may remain pasty, tear when lifted, or leave a thick coating on the container. If it becomes increasingly sticky toward the end of bulk fermentation, the gluten may be weakening.
The timing of the stickiness often reveals the cause.

The Dough Is Still Developing Strength

Freshly mixed dough is usually at its stickiest. The flour has not yet absorbed all the water, and the gluten network is still disorganized.
A short rest after mixing allows hydration to continue. Stretch and folds or coil folds during the first part of bulk fermentation then help the gluten form a stronger network.
You should notice a gradual change. The dough may begin as a rough, sticky mass but become smoother, more elastic, and easier to lift after each set of folds. It may still cling to the bowl, but it should release more cleanly.
If the dough improves during bulk fermentation, the early stickiness was probably normal.

The Hydration May Be Too High for the Flour

A recipe can work perfectly with one flour and feel excessively wet with another. Flour differs in protein quality, milling, age, and water absorption.
If the flour cannot support the amount of water in the recipe, the dough may spread across the bottom of the bowl and stick heavily even after several folds. It can feel slippery rather than elastic and may never form a clearly defined mass.
Adding flour during bulk fermentation is rarely the best solution because it is difficult to distribute evenly. Next time, hold back a small amount of the mixing water. Add it gradually only if the dough develops enough strength.
Even a modest reduction in hydration can make the dough much easier to handle.

The Gluten Network May Be Too Weak

Sticky dough is not always simply wet. It may also lack gluten development.
Under-mixed dough often tears before it stretches. Folds may tighten it briefly, but it soon returns to a loose, shapeless state. This can happen when the initial mixing was too short, the folds were insufficient, or the flour was not strong enough for the recipe.
Give the dough time to rest, then perform gentle folds early in bulk fermentation. Each set should create a visible improvement. Avoid aggressively working the dough after it has already become airy, because late handling can damage the structure you are trying to build.

Overfermented Dough Can Become Sticky Again

Dough sometimes begins bulk fermentation normally, gains strength, and then suddenly becomes very sticky near the end.
This often points to overfermentation. As fermentation continues, acids and enzymes gradually weaken the gluten network. Eventually, the dough loses elasticity and begins to smear against the container.
Overfermented dough may feel unusually warm, fragile, and difficult to lift. It stretches without resistance, tears easily, and leaves sticky residue behind. It may also have a very strong fermented aroma and an extremely bubbly surface.
If the dough regularly reaches this condition, shorten bulk fermentation. Do not wait for it to double unless the recipe and dough temperature genuinely require that much expansion.

Warm Dough Feels Stickier

Temperature affects both fermentation speed and dough texture.
Warm dough is softer and more extensible, so it adheres more readily to the bowl. It also ferments faster, which increases the risk of the gluten weakening before you notice that bulk fermentation has gone too far.
In a warm kitchen, use cooler mixing water and check the dough earlier than usual. Keep the container away from direct sunlight and hot appliances.
Cooling can make healthy dough easier to handle, but it cannot restore gluten that has already broken down.

The Container Makes a Difference

Smooth, straight-sided containers are usually easiest to work with. Glass and food-safe plastic allow you to watch the dough rise and release it with a scraper.
A rough or scratched bowl gives the dough more places to grip. Very wide bowls also make it harder to judge volume increase because the dough spreads outward rather than rising visibly.
You do not need to coat the container heavily with flour or oil. Too much oil can make folds slippery and may make fermentation harder to judge. A very light coating can help in some recipes, but a damp scraper is usually enough.

Release the Dough Gently

When removing the dough, avoid pulling it upward with your fingers. This stretches and tears the gluten and makes the dough appear even stickier.
Lightly wet your hand and dough scraper. Loosen the dough around the edges, slide the scraper underneath, and turn it out with one confident movement.
A small amount left in the bowl is not a failure. The goal is to preserve the dough’s structure, not to make the container perfectly clean.

Let the Timing Tell You What Is Wrong

If the dough is sticky immediately after mixing but becomes smoother after resting and folding, it is probably developing normally.
If it stays loose and sticky throughout bulk fermentation, look at hydration, flour strength, and gluten development.
If it becomes stronger first and then turns sticky, fragile, and difficult to release, fermentation has probably continued too long.
Stickiness alone does not determine whether dough is healthy. Look for cohesion, elasticity, gas retention, and gradual strengthening. Good sourdough can remain soft and slightly sticky while still lifting from the bowl as one living, well-structured mass.
