Why Does My Sourdough Spread Instead of Rising?
Sometimes everything looks perfect.
The dough rises beautifully during bulk fermentation. It feels airy, soft, and full of bubbles. You gently turn it out of the banneton, expecting it to spring upward in the oven.
Instead, it slowly spreads across the parchment like a pancake.

A sourdough loaf that spreads instead of rising is one of the most common problems home bakers face. The good news is that the dough is usually giving you clear clues about what went wrong.
The Dough Has Lost Its Strength
Healthy dough behaves like a balloon.
As the yeast produces carbon dioxide, a strong gluten network traps the gas and supports the loaf. When that network is weak, the dough can't hold its shape. Instead of expanding upward, it flows outward under its own weight.
The question isn't simply "Why did it spread?"
The better question is:
"Why did the dough lose its strength?"
Overproofing Is the Most Common Cause
One of the biggest reasons sourdough spreads is overproofing.
As fermentation continues, the gluten stretches more and more. Eventually it reaches its limit.
The dough may still look beautifully puffy inside the banneton, but once you remove that support, the gluten can no longer hold the loaf together.
Typical signs include:
- the dough feels extremely soft;
- it spreads within seconds after turning out;
- scoring becomes difficult;
- the loaf has very little oven spring.
Weak Gluten Development
Sometimes the dough simply wasn't developed enough.
Perhaps you skipped several stretch-and-folds.
Maybe the mixing was too short.
Or the flour wasn't strong enough for the hydration you used.
Without enough gluten strength, the dough cannot support its own weight during the final proof or the first minutes of baking.
Hydration May Be Too High
Many bakers increase hydration hoping for a more open crumb.
High hydration can produce beautiful bread—but only when the dough is strong enough to handle it.
If the flour cannot absorb that much water, the dough becomes loose and difficult to shape.
Reducing hydration by only 2–3% is often enough to improve the loaf dramatically.
Shaping Creates Structure
Good shaping is about much more than appearance.
It creates surface tension.
That tight outer "skin" helps the loaf keep its shape while proofing and during oven spring.
If shaping is too gentle or rushed, the dough may spread even when fermentation was correct.
Flour Makes a Difference
Not every flour performs the same.
Some bread flours can easily support 80% hydration.
Others begin losing strength much earlier.
If your dough spreads every time despite careful fermentation, try comparing different bread flours before changing the recipe itself.
Can You Save the Dough?
Sometimes, yes.
If you notice the dough becoming loose during bulk fermentation, an extra fold may help strengthen it.
If it has already completely spread after proofing, there is usually little you can do except bake it and learn from the result.
Fortunately, even a flat loaf often tastes delicious.
How to Prevent It Next Time
Most spreading loaves can be avoided by making a few small adjustments:
- avoid overproofing;
- build stronger gluten during bulk fermentation;
- shape the dough with good surface tension;
- use flour suited to your hydration level;
- reduce hydration slightly if necessary.
Small improvements usually make a much bigger difference than changing the entire recipe.
A loaf that spreads instead of rising isn't a failure.
It's feedback.
Your dough is simply telling you that it needed more strength before it entered the oven.
Once you learn to recognize that signal, you'll start producing taller loaves with better oven spring, improved crumb, and far more consistent results.
