Why Does My Sourdough Starter Smell Like Acetone?
You open your sourdough starter and immediately notice a sharp smell that reminds you of nail polish remover. It can be alarming, especially if the starter normally smells pleasantly sour, fruity, or slightly like yogurt.
Fortunately, an acetone smell does not usually mean that your starter has spoiled. In most cases, it means the starter has run out of food and has remained hungry for too long.
The aroma is unpleasant, but the problem is normally easy to correct with a few well-timed feedings.

Why Does a Sourdough Starter Develop an Acetone Smell?

A sourdough starter contains wild yeast and lactic acid bacteria that feed on the carbohydrates in flour. After feeding, these microorganisms become active, produce gas and acids, and cause the starter to rise.
Eventually, the available food begins to run out. The starter passes its peak, collapses, and becomes increasingly acidic. If it remains in this condition long enough, its aroma may change from pleasantly fermented to sharp and solvent-like.
The most common reason is simply waiting too long between feedings.
This often happens when a starter is kept at room temperature, especially in a warm kitchen. A feeding schedule that works during winter may not work in summer because the starter ferments and consumes its food much faster.

Your Feeding Ratio May Be Too Small

The amount of fresh flour and water given to the starter determines how long it can remain active before becoming hungry again.
For example, a feeding ratio of 1:1:1 means:
  • 20 grams of starter;
  • 20 grams of water;
  • 20 grams of flour.
This ratio can work when you need the starter to peak quickly. However, in a warm room, such a small feeding may be consumed within only a few hours.
If your starter repeatedly smells like acetone before the next feeding, try a larger ratio such as 1:3:3 or 1:4:4.
For a 1:4:4 feeding, you could combine:
  • 10 grams of starter;
  • 40 grams of water;
  • 40 grams of flour.
This gives the microorganisms more fresh food and helps the starter stay balanced for longer. It is usually more effective than keeping a large amount of old, acidic starter and adding only a small quantity of flour.

Warm Temperatures Make the Starter Hungry Faster

Temperature has a strong effect on fermentation.
In a warm kitchen, your starter may rise, peak, and collapse much sooner than expected. If it reaches its peak in four or five hours but you feed it only once every 12 or 24 hours, it may spend most of that time in a hungry, acidic state.
You do not necessarily need to feed it constantly. Instead, you can use a larger feeding ratio, keep it in a slightly cooler place, or store it in the refrigerator if you do not bake regularly.
A liquid starter can also ferment more quickly than a stiff one. If your starter is very runny, first check that you are measuring the flour and water by weight rather than by volume.

Why Does It Still Smell After Feeding?

One feeding may not immediately remove the acetone smell, particularly if the starter has been neglected for several days or stored in the refrigerator for a long time.
The old starter still contains accumulated acids and other fermentation by-products. When too much of it is carried into the next feeding, the sharp aroma can remain.
Keep only 10 grams of starter and feed it with 30–40 grams of water and the same amount of flour. Allow it to rise at room temperature, then repeat the feeding once it reaches its peak or shortly afterward.
Two or three regular feedings are usually enough to restore a milder, pleasantly sour aroma.
Watch how the starter behaves as well as how it smells. A recovering starter should begin rising predictably, develop bubbles throughout the jar, and reach its peak without immediately becoming watery or collapsing.

Can You Bake with a Starter That Smells Like Acetone?

It is better not to use it immediately.
An acetone-smelling starter may still contain living yeast, but it is probably past its peak and unbalanced. It may ferment bread slowly and contribute excessive acidity to the dough.
Feed it until the sharp smell disappears and the starter rises reliably again. Use it at or near its peak, when it looks aerated and has a clean fermented aroma.
You normally do not need to throw it away simply because it smells like acetone.
However, discard the starter if you see fuzzy mold, pink or orange discoloration, or notice a genuinely rotten or putrid smell. Feeding cannot make a moldy starter safe again.

Is Acetone the Same as an Alcohol Smell?

The two smells are related to fermentation and often appear when a starter needs attention, but they are not exactly the same.
A neglected starter may smell like beer, wine, or alcohol and sometimes develop a layer of liquid known as hooch. An acetone aroma is sharper and resembles nail polish remover or solvent.
In practice, both usually indicate that the starter has passed its peak and needs fresh food. The same recovery method—keeping a small amount and giving it several generous feedings—works in most cases.

How to Prevent the Smell from Returning

Observe how long your starter takes to reach its peak after feeding. This will tell you more than following a fixed schedule.
If it peaks too early and smells harsh long before the next feeding, increase the feeding ratio. During hot weather, adjust the routine rather than expecting the starter to behave as it did in a cooler kitchen.
Keep the sides of the jar clean and use a rubber band or marker to track the rise. This makes it easier to see when the starter has peaked and begun to fall.
A healthy starter does not have to smell exactly the same every day. Its aroma can be fruity, yeasty, mildly acidic, or similar to yogurt. What matters is that it rises consistently and does not remain hungry for long periods.
The smell of acetone is usually a request for food, not a reason to panic. With several proper feedings and a schedule suited to your kitchen temperature, the starter should soon return to its normal aroma and activity.
