Why Is My Sourdough Crust Pale After Baking?
You lift the lid from the Dutch oven expecting a deep golden loaf, but the crust is still beige and dull. The bread may be fully risen and the crumb may even be properly baked, yet the surface looks as though it needs another twenty minutes.
A pale sourdough crust usually means that the surface did not receive enough dry heat to brown properly. Sometimes the oven was not hot enough. In other cases, the loaf remained covered for too long, the bake ended too early, or fermentation left too little available sugar for browning.
The appearance of the crumb can help you understand which explanation is most likely.

A Pale Crust Does Not Always Mean Raw Bread

Colour is useful, but it is not the only sign that bread is baked.
A loaf may remain pale while its interior reaches the correct temperature. This often happens when it is baked in a humid environment or kept covered for most of the baking time. The crumb sets, but the crust never receives enough dry heat to develop colour.
If the loaf feels light, sounds hollow, and has an internal temperature of approximately 96–99°C, the centre is probably baked. It may simply need more uncovered time for the surface to brown.
A pale loaf with a wet, gummy crumb is different. In that case, the bread was probably removed from the oven too soon or baked at a temperature that was too low.

The Oven May Not Be Fully Preheated

A home oven can indicate that it has reached the selected temperature before the walls, baking stone, steel, or Dutch oven are completely heated.
When cold dough is loaded into an insufficiently preheated oven, the temperature drops quickly. The loaf then spends much of the bake warming slowly instead of receiving the strong initial heat needed for oven spring and crust development.
Preheating for at least 30–45 minutes is often helpful, especially when using a heavy Dutch oven or baking stone. An oven thermometer can also reveal whether the real temperature matches the setting on the control panel.
For many wheat sourdough loaves, an initial temperature of approximately 240–250°C works well. The temperature can be reduced after the loaf has expanded.

Too Much Steam Can Delay Browning

Steam is essential during the beginning of the bake. It keeps the dough surface flexible so the loaf can expand and the score can open.
But steam is not needed for the entire bake.
If the Dutch oven lid remains on for too long, the surface stays moist and cannot brown. The same problem can occur in an open oven when a tray of water continues producing steam long after oven spring is complete.
Remove the lid or steam source after approximately 15–25 minutes, depending on the size of the loaf and the recipe. The remaining part of the bake should take place in a drier oven.
If the bread is fully baked but still pale, move it out of the Dutch oven and place it directly on the oven rack for the final few minutes. This allows hot air to reach the entire crust.

Fermentation Changes the Way the Crust Browns

During fermentation, enzymes break some of the flour’s starches into simpler sugars. These sugars help create a rich brown crust in the oven.
When dough ferments far beyond its strongest point, the microorganisms may consume much of the available sugar. The loaf can then bake with a pale, dull surface even when the oven temperature is correct.
An overfermented loaf may also spread, feel weak during shaping, and show little oven spring. If these signs appear together with a pale crust, extending the bake will add some colour, but it will not correct the original fermentation problem.
Try ending bulk fermentation or final proof earlier on the next bake.

Flour on the Surface Can Hide the Colour

A light dusting of flour gives sourdough a rustic appearance, but a heavy layer can make a well-baked loaf look pale.
Rice flour is especially resistant to browning. This makes it useful for preventing dough from sticking to a proofing basket, but any flour left thickly on the surface will remain white in the oven.
Before scoring, gently brush away the excess. Keep only the amount needed for the pattern you want.
If the crust underneath the flour is golden, there is no baking problem at all—the colour is simply hidden.

Give the Loaf Enough Uncovered Baking Time

When the crumb is baked but the crust is pale, the simplest solution is usually a longer dry finishing stage.
Remove the lid sooner, take out the steam tray, and allow the loaf to bake uncovered until the surface reaches the colour you prefer. If the bottom is already dark, place an empty baking sheet on a lower rack to shield it from direct heat.
Do not rely on a fixed baking time alone. Loaf size, hydration, flour, oven accuracy, and baking vessel all change how quickly the crust develops.
A well-baked sourdough crust can range from golden to deep chestnut. What matters is that it is evenly coloured, crisp without being painfully hard, and supported by a fully baked crumb.
