Why Is My Sourdough Too Sour?
Sourdough should have a pleasant fermented flavor, but it does not need to taste sharply acidic. When the sourness overwhelms the flavor of the grain, the dough has usually accumulated more acid than the baker intended.
This can begin with the starter, develop during a long bulk fermentation, or become stronger during an extended cold proof. The best way to make milder bread is not to hide the acidity with sugar. It is to control how and when the acids develop.

The Starter May Be Too Hungry

A starter becomes increasingly acidic after it reaches its peak and begins to fall. If it is repeatedly left unfed for too long, that accumulated acidity is carried into the dough.
A hungry starter may smell strongly of vinegar, alcohol, or acetone. It can still raise bread, but the flavor may be much sharper than expected.
Before baking, give the starter one or two regular feedings and use it close to its peak, while it is well risen and full of bubbles. If it becomes sour very quickly, use a larger feeding ratio such as 1:3:3 or 1:5:5. More fresh flour and water dilute the existing acids and provide enough food for a longer cycle.
Do not use a large amount of old starter simply to make the dough rise faster. It also adds more acidity to the recipe.

Fermentation May Be Lasting Too Long

Acidity continues developing throughout bulk fermentation and final proofing. The longer the process lasts, the more noticeable the sour flavor usually becomes.
Dough can ferment slowly because the room is cold, the starter is weak, or too little starter was added. Even if the dough does not look overfermented, many extra hours give bacteria more time to produce acids.
Use an active starter and keep the dough at a comfortable temperature. Around 24–26°C usually supports steady fermentation. The goal is not to make the dough hot, but to prevent a short process from turning into an unnecessarily long one.
End bulk fermentation when the dough is aerated, elastic, and visibly increased in volume. Waiting for it to double in every recipe may result in stronger acidity and weakened gluten.

A Long Cold Proof Increases Sourness

Refrigeration slows fermentation, but it does not stop acid production immediately.
A cold proof adds flavor and makes scoring easier, yet a loaf left in the refrigerator for a very long time can become much more sour. This is especially noticeable when the dough was already highly fermented before chilling.
For milder bread, refrigerate the shaped loaf earlier and shorten the cold proof. If you normally leave it for 18–24 hours, try a shorter overnight rest and compare the flavor.
Check the actual temperature of the refrigerator as well. A warm refrigerator allows fermentation to continue faster than expected.

Temperature Changes the Character of the Flavor

Cooler, slower fermentation often produces a sharper sourness, while moderately warm fermentation tends to create a softer, more rounded acidity.
This does not mean that warm dough can never become sour. Any dough left fermenting too long will continue accumulating acid. Temperature and time always work together.
If your bread has a sharp vinegar-like flavor, avoid combining a cold dough, a hungry starter, and a very long refrigerator proof. Changing only one of these factors may already make a noticeable difference.

Whole-Grain Flour Can Taste More Acidic

Whole wheat and rye flour provide additional minerals and nutrients for fermentation. They can make a starter or dough more active and give the bread a deeper, more intense flavor.
This does not mean whole-grain flour is a problem. However, a loaf containing a large percentage of rye or whole wheat may taste more sour than white wheat bread made with the same schedule.
If you want a milder loaf, reduce the whole-grain percentage slightly or shorten fermentation rather than adding sweeteners to cover the flavor.

How to Make the Next Loaf Less Sour

Start with a freshly fed starter and use it near its peak. Avoid letting the dough sit for unnecessary hours, especially at the end of bulk fermentation. Shorten an extended cold proof and make sure the refrigerator is sufficiently cold.
Change one factor at a time. If you alter the starter ratio, dough temperature, fermentation time, and flour all at once, you will not know which adjustment improved the flavor.
An already baked sour loaf cannot be made less acidic, but it can still work well for toast, grilled sandwiches, croutons, or recipes with cheese and other rich ingredients.
Pleasant sourness comes from balance. A healthy starter, steady fermentation, and a reasonable cold proof create complexity without allowing acidity to dominate the bread.
