How to Proof Baguettes at Home Without Losing Their Shape
Shaping a baguette is only half the job.
You can make a beautiful piece of dough, place it on the table for its final proof, come back forty minutes later — and find that your neat baguette has slowly spread sideways into a flat loaf.
This is completely normal.
Baguette dough is relatively soft, and once it has been shaped, it needs support during the final proof. Professional bakeries use a baker's couche, but you do not need professional equipment to get good results at home.
A clean kitchen towel, linen cloth, or even parchment paper can do the job surprisingly well.
The important thing is understanding why the dough needs support and how much proofing is enough.
Why Baguettes Spread During Proofing
A baguette is long, narrow and relatively light.
Unlike dough placed inside a loaf pan, it has nothing holding its sides.
As fermentation continues, gas accumulates inside the dough and the gluten structure relaxes. The loaf becomes softer and fuller.
If it is left completely unsupported on a flat surface, some of that expansion naturally goes sideways instead of upward.
This becomes even more noticeable with wetter doughs.
That does not mean the dough is bad.
It simply needs a little help keeping its shape.
What Is a Baker's Couche?
A couche is a heavy piece of linen traditionally used for proofing baguettes and other long loaves.
The baguettes are placed next to one another with folds of fabric raised between them.
Those folds act like small walls.
They prevent the baguettes from spreading into each other and help each loaf maintain its long shape while it proofs.
Linen is especially useful because properly floured linen does not stick easily to dough and absorbs a small amount of surface moisture.
This can help create the thin skin that makes baguettes easier to score.
But you do not have to buy a couche before baking your first baguette.

Using a Kitchen Towel Instead of a Couche
A plain cotton or linen kitchen towel works very well.
Choose a towel without a thick fluffy texture. Smooth fabric is much easier to flour and much less likely to stick to the dough.
Dust the towel generously with flour.
Rice flour is particularly useful because it absorbs less moisture and tends to stick less than wheat flour, but ordinary flour will also work.
Place your first shaped baguette on the towel.
Then lift the fabric beside it to create a ridge.
Place the second baguette on the other side of that ridge.
Repeat until all your baguettes are supported.
The folds do not need to be beautiful.
Their job is simply to stop the dough from spreading sideways.
Can You Proof Baguettes on Parchment Paper?
Yes.
Parchment is probably the easiest method when you are just beginning.
Place the shaped baguettes on parchment and leave enough paper between each loaf to lift into folds.
These folds create small dividers between the baguettes in much the same way as a couche.
One advantage is that you may be able to transfer the baguettes to the oven without moving them off the parchment.
That reduces the risk of deflating delicate dough.
The disadvantage is that parchment does not absorb moisture like linen, so the surface of the dough may remain slightly softer.
For home baking, however, it is still a very practical solution.
How Long Should Baguettes Proof?
There is no single correct number of minutes.
For many baguette doughs, final proofing may take around 40–60 minutes at room temperature, but temperature, dough strength, yeast amount and fermentation before shaping all affect the timing.
A warm kitchen speeds things up.
A cooler kitchen slows them down.
That is why I would not rely only on the clock.
Look at the dough.
The baguettes should become visibly fuller and slightly lighter.
They should still have enough strength to hold their shape.
If they become extremely soft, fragile and difficult to move, they may have gone too far.
The Finger Test Helps — But Do Not Depend on It Completely
You can gently press the surface of the baguette with a lightly floured finger.
If the indentation springs back immediately, the dough probably needs more time.
If it comes back slowly and leaves a slight impression, the loaf is often close to ready.
If the indentation remains completely and the dough feels weak, it may be overproofed.
But baguette dough can be delicate, so press very gently.
The overall appearance and feel of the dough matter more than one finger test.
Slightly Underproofed Is Better Than Overproofed
When I am unsure with baguettes, I prefer to bake them a little earlier rather than too late.
A slightly underproofed baguette still has strength left for expansion in the oven.
An overproofed baguette can become fragile, spread during transfer and produce very little oven spring.
That difference becomes especially obvious when you score the loaf.
A properly proofed baguette usually accepts the blade cleanly.
An overproofed one may collapse around the cut.
How to Transfer Baguettes Without Deflating Them
This is often the most frightening part for home bakers.
The baguettes look beautiful on the couche — and now they somehow need to reach the oven.
The less you handle them, the better.
Traditionally, bakers use a thin transfer board called a flipping board or transfer peel.
At home, a thin cutting board, stiff piece of cardboard covered with parchment, or another flat surface can work.
Gently roll the baguette from the couche onto the board and then onto your baking surface.
Do not grab it with both hands and try to carry it through the air.
That almost always stretches the dough unnecessarily.
Score After Transfer
Transfer the baguettes first and score them afterward.
Use a very sharp blade.
For a traditional baguette, make several overlapping cuts running almost along the length of the loaf rather than cutting straight across it.
Hold the blade at a shallow angle.
This helps create the raised edges often called ears.
The cuts also control where the baguette expands during the first minutes of baking.
Do Not Forget Steam
Once the baguettes are proofed, transferred and scored, steam becomes the next important step.
Steam keeps the surface of the dough flexible during the beginning of baking.
That gives the baguette time to expand before the crust hardens.
If your oven does not have a steam function, preheat an empty metal pan with the oven.
After loading the baguettes, carefully pour a small amount of boiling water into the hot pan and close the oven quickly.
After the first part of baking, release the steam so the crust can dry and become crisp.
That combination — supported proofing, correct fermentation and strong initial steam — makes a much bigger difference than expensive baguette equipment.
You Do Not Need a Perfect Setup
A professional couche is useful.
A transfer peel is useful.
A baking stone is useful.
But none of them is required to understand baguette dough.
Start with what you already have.
A towel can support the loaves.
Parchment can help with transferring them.
A simple metal pan can create steam.
The most important skill is still learning to recognize the dough at the moment when it is ready to bake.
Once you begin seeing that change — from a tight freshly shaped baguette to a slightly fuller, airy loaf that still has enough strength to hold itself — final proofing becomes much less mysterious.
